On a totally unrelated side note, this "giving up chocolate for Lent" thing is proving to be quite the challenge. I have not cheated, but my chocolate cravings are getting quite intense! I took R and G to Whole Foods for lunch today with a friend and her two kids...they were giving away chocolate cupcake samples. Oh-my-goodness it took every ounce of self control to steer clear. 16 days and counting...

Congrats on the chocolate. I sure hope the Easter Bunny gives you a nicely stocked basket this year. I've cheated a few times, but overall I'm pretty proud of myself.
As for substitutions, I think we just have the basic ones for adding moisture to a recipe (bananas, applesauce, yogurt, sour cream). I always liked Paula Deen's section on substitutions.
