Next to boiling water, this could be the easiest recipe EVER

I recalled last week one of my lost slow cooker recipes from years ago. When I found it I felt as though I had uncovered a lost treasure, since this recipe so easy, you can hardly call it cooking.

It requires almost no effort, is foolproof and the results are tasty and healthy. Excited?

Here's a picture first:

It is Slow Cooker "Roast" Chicken, and the recipe couldn't be easier.

Slow Cooker "Roast" Chicken

1 whole roasting chicken, between about 4-6 pounds
2 teaspoons of jerk seasoning, cajun seasoning or any old seasoning mix you like

Remove any innards from the chicken (usually the organs (yuck!) are inside the cavity of the whole chicken). Place in the slow cooker. Rub the chicken all over with the seasoning mix.

Cook on low for 8-10 hours.

Serves 4-6.

As the chicken cooks, the fat melts and bastes the chicken. See all the liquid in the bottom of the slow cooker? That is just from the juices percolating inside the chicken. I didn't add a drop of liquid to the pan. The chicken is so moist, you won't believe it.

We had enough leftover chicken after we ate it for dinner, we made chicken enchiladas the next night. Two meals out of one inexpensive chicken. Love it!

Oh...this will be my Sunday dinner this week! Seems so easy! Okay - would you share your enchilada recipe? So many out there it is overwhelming to know the best way to do them. Thanks for all the great stuff!

Perfect! So much cheaper and better for you than the rotisserie chicken I like for my go-to meals.

I can second that this recipe is awesome! I made this last month and it's my favorite way to make chicken now! I't so tender and just enjoyable! Thanks for sharing and for the reminder!

I used this recipe (with only salt and pepper) yesterday while I was at work and Matt loved the result. I was thrilled with it, too. My chicken salad turned out wonderfully and thanks to you, I may never roast a chick in the oven again! Thanks for sharing!
