Recipe Free Cucumber Salad

Our whole family loves fresh summer cucumbers. We're hoping our garden yields some fresh cukes this summer, but regardless, this is my new favorite way to dress up cucumbers for a meal.

This is so easy, you won't believe it.

Recipe Free Cucumber Salad

One cucumber, peeled, deseeded and diced
A few radishes, very thinly sliced
Optional: A few very slices of red onion or scallion, diced -OR- 1/2 or more of shelled edamame
1/2 cup or more of *seasoned* rice wine vinegar

Mix in a bowl and let sit...at least an hour or so, but they get better after a day.

So easy, and so tasty:

Will do. We ate a whole cucumber for snack yesterday and I'm headed back to the farm stand for more - and corn. Mmmm.

We use cucumbers, tomatoes,and onions in Italian dressing. You can't go wrong with cucumbers!

I've been dipping my cukes in hummus as a snack.

I probably won't try this recipe since we're not big radish eaters Chez Slacker. Wish I could blame it on John, but that's more of a me thing.

SM-try it with just the cukes then...or your favorite veggie. The seasoned rice vinegar is just a great tart marinade.

You know, I never liked radishes until recently. SPH likes them and now I sneak 'em in all the time.

I make this same thing but I also add some tomatoes, dried oregano, dried basil and kosher salt. Delish. I have never tried radishes, but I think I will now.
