An alternative mash

SPH came up with this recipe during his ultra-low carb kick. I think it is a pretty popular concept, using cauliflower instead of potatoes to have a mashed side. We continue to use this side dish since it is easier (no peeling!) and healthier than potatoes.

Mashed Cauliflower

1 medium sized cauliflower head, cut into a large pieces
1-2 garlic cloves
1/4 + c light sour cream
1/4 + c skim milk
1/2 t salt
1/4 t ground pepper
2 T parmesan cheese

Steam the cauliflower and garlic for about 10 minutes or until the cauliflower is very tender. Place in a food processor and begin to puree. Add 1/4 cup sour cream and milk, salt, pepper and parmesan cheese and continue to puree until smooth. Depending on the size of your cauliflower, you may need to add more sour cream or milk.

Love pureed cauliflower...we also had pureed parsnips at dinner the other night. It was pretty amazing too!

I tried a cauliflower mash a while back and John declared it not-so-good. And my weirdo kids don't eat mashed potatoes, so I'm not sure they'd try it.

Maybe I'll give it a shot...I can eat it all if they won't, right?

SMama--I think the parmesan somewhat negates the cauliflower-y taste in this recipe. Maybe try upping the cheese if he is a cheese man.

We love this. I actually do half potatoes and half cauliflower. I really don't think you can taste the cauliflower in it.
