Three day weekends

Last week was an exciting week, made only the more exciting by the fact that SPH took off Friday and we had a three day weekend together. R and I hit COSI for some special mommy/R time on Friday morning, which was a fun treat. On Saturday we celebrated...because the big news of the week is that SPH accepted a job offer. It is product manager position with a software company here in Columbus for a new software in development. He is thrilled with the opportunity and we are excited to know where our near-future will unfold.

Other than that, we ran our regular errands, played with the boys and went to church. Oh, and chased G a lot! G has decided that he loves to hide. He tries to hide anywhere, but here are some of the places where I have recently found him:Maybe he was in our pantry, because he wants to help us cook? If so, here is what he can help us with this week:

Maple Glazed Ancho Chili Salmon, 3 Bean Salad, Cheese Grits
Mushroom, Artichoke and Gorgonzola Fettucini (modified for the kiddos)
Goat Cheese Pork Tenderloin, Pureed Squash and Rice
Bean and Sausage Soup
Baked Burritos and Oven Fried Okra

Renee, your beef stew is still on our "to try" list...

Any other good meals plans out there? Please share!

Congrats to SPH on the job! I'm sure it's a relief to have next year kind lined up.

No good meal plans here. The good news was that John and E did the grocery shopping this week. The bad news is that I didn't have time to work a meal plan/develop a list prior to their departure...and it shows our fridge and pantry! So, we're having pretty uninspired meals here.

Tonight we are having grilled chicken salads. Tomorrow is Chicken Dijon and sauteed spinach. Wednesday is burgers and sausage (guess who came up with that meal!?). Thursday will be a pasta dish.

This week we are having shrimp and grits (Southern Living), chicken & dumplings (MSN), chicken-orzo salad with feta cheese (this months Cooking Light), and asian beef and noddle-filled lettuce cups (also this months CL).

I would like to have the other recipes you are cooking this week that aren't on your blog. They sound great!

Yea!! So glad you've passed another hurdle.

We're doing baked burritos tonight and we're at my mom's tomorrow for appetizers (the Batches are in town). Henry and Charlotte come in late Wednesday so no real plans for that night. I know we're going out for BBQ on Thursday night and Friday night we're having everyone over for fajitas and margaritas. Saturday is BBQ chicken and Sunday night we're at my mom's.

Congrats on the new job! I know you are thrilled!! Pretty boring meal week here too. Last night we had shrimp pasta with peas and avocado, tonight turkey burgers with sweet potato fries and salad, Wednesday is spaghetti with meat(ground turkey) sauce, Thursday is moms night out (leftovers) and Friday is pizza night. We have family in town Saturday night, so we will be going out for seafood, Sunday night we are doing Slacker Mama's carnitas...that's all I have!

Thanks for sharing your meals. It honestly helps me spur some new ideas, even if it is a run of the mill sort of thing.

Happy Eating!
