Super Bowl, Super Weekend

A quick shout out to SPH--thank you, thank you, thank you for getting up with the boys on Saturday and Sunday so I could be lazy and sleep in a bit. Thanks for making me and the boys pancakes Saturday morning. Thank you too for taking R swimming Sunday so I could have some time to myself. Thanks for being you. :)

After a looooong week, this weekend was spectacularly low key and relaxing. Sunday it warmed up a fare bit and we were able to tackle the ice removal process on our driveway. It's funny, a mere few days ago we were buried under so much ice and snow I thought we'd never see the day of a dry driveway and yet, we are slowly making progress:

The weather was actually in the low 50s yesterday, so it was fun to play outside in the snow without feeling frigid:

..and with all the melting snow, R and I were able to make a snowman:


Of course we watched the Super Bowl last night. Isn't it nice to have a major football event/bowl that doesn't start at 8pm? The boys were thrilled to be able to watch some of the game. I even whipped up some of my Golden Chili with Carmelized Onions and Sausage, making a double batch to stow in the freezer. It simmered all day long, filling our house with the best smell.

We also had our fair share of snacks, so this week it is back to healthy eating!

Our meals for the week:

Hanoi Grilled Pork Loin, Summer Rolls (hey, a girl can mix it up and have summer rolls in January, right?)
Whole "Roasted" Chicken In the Crockpot, Roasted Asparagus and Sweet Potato Fries
Olive-Chicken Enchiladas and Frijoles Refritos
Chickpea "Hummus" Soup

All new recipes, all to share with you if they pass muster. Actually, I have made the pork and chicken before, I am just tweaking the recipes a bit and will pass them on to you.
