Waffle rhymes with...

R is all about rhyming these days, so how apropos that my very first attempt at homemade belgian waffles (the iron was a gift from my birthday) turned out so, well, awful.

I didn't take the advice to "season well with oil," I mean, I sprayed it with some canola oil, but obviously, it just wasn't enough:
Down, but not out, I tried again and again. I think this recipe the Sweet Peas and I developed is worthy of posting. It is a simple recipe (many you find call for whipping of egg whites, etc) and jam-packed with good stuff, hence the name:

Whole Lotta Good Stuff Waffles

Dry Ingredients:
1 ¼ c whole wheat (or, we use 1 c ww flour, ¼ c ground flaxseed)
¾ c flour
3 T brown sugar
2 t baking powder
½ t cinnamon
¼ t nutmeg
¼ t salt

Wet Ingredients:
2 ripe mashed bananas (or, one banana and ½ a cooked mashed sweet potato)
1 egg
2 egg whites
3 T canola oil
1 t vanilla
1 ½ c milk

Optional mix-ins: blueberries, walnuts, raisins, other fruit, even *bacon*

In a large bowl, mix the dry ingredients, stirring to ensure everything is incorporated. In a medium bowl, mix the banana (or banana and sweet potato) and eggs, wisking well. Add additional wet ingredients until well blended. Add wet ingredients to dry ingredients, stirring only until just blended (over mixing will make your waffles tough).

In a preheated (and well oiled!) waffle iron, pour about half the amount of waffle batter you usually do…add any mix-ins, then pour the remaining amount of batter to cover.

Cook according to your waffle iron’s instructions.

This morning we did R's with walnuts, G's with blueberries. I have to say, R's tasted pretty darn good, just like banana bread.

Just reading a recipe from Williams-Sonoma catalog for banana filled pancakes with whipped egg whites - I gave up after that line. No way am I cleaning 3 appliances to make breakfast (not including the coffee maker).

I got my waffle iron for my wedding - thanks Melissa - and I love it. We made cornmeal waffles topped wtih chili for dinner last week. Super yummy.

Those do sound good! We'll have to give it a try. Bananas don't last very long in our house though, so I'll have to hide some.

We have a waffle maker that we use somewhat frequently. However, I've never ventured further than the basic waffle recipe that came with it. Maybe I'll give this a shot.

Jenn, can you share your cornmeal waffle recipe? Sounds delish!

We will have to try those. We have a waffle machine also but do not use it as much. We also tried your pretzel recipe, the other one did not work, and they turned out great. The girls enjoyed making them and we all loved eating them. Next time we will buy or make some cheese sauce to make them extra delicious.

I have been busy this week but will call soon. Julianne starts school tomorrow so we have been doing school stuff and D is off this week.

We love our waffle makers (actually have two - one round and one square) and tend to make bulk waffles and them freeze them for the morning toaster. We do the same for pancakes.

I'm sure SPC could make them healthier and yummier.

We also had these for breakfast with honey.
