Healthy Meal Plan: Got Hard Boiled Eggs and Ham?

Here's a healthy meal plan for the week after Easter (and for you, Karen!):

Meatless Monday:   Egg White Salad with Chives, Kale Chips, Fresh Strawberries

 

Garlicky Smashed Tomato and Arugula Spaghetti, Fresh Pineapple




Lightened Quiche (use leftover ham and veggies from Easter if you have 'em), Steamed Broccoli, Clementines



Vegetarian Taco Soup, Baked Tortillas, Apple Slices

 


Slow Cooker Rosemary Chicken and Vegetables, Rice, Pears



Homemade Pad Thai, Mango



As we get ready for Easter weekend and all the joy and hope that Easter brings, I hope that the message of Easter and new life blesses you!

Everything looks amazing!!! The quiche especially (that's something I can never pass up!).

Thanks for coming to the demo last night. It was sort of a bad one because our chef had prepared the WRONG recipes! oops, next time it will flow better :) I hope you enjoyed it!

I really enjoy these healthy meal plans you post. It gives you a snapshot of healthy eating for a week. So many people think eating healthy is beyond their means... and really it's not! Thanks!
