Spring is just around the corner but I am not ready to give up on soup season. It is still winter after all, and even if your weather is warming, nothing soothes the soul like soup on a rainy spring night.

Produce:
1 onion
1 cup packed spinach, kale or other green
fresh parsley (for topping, optional)
Grocery:
1 - 15oz can vegetable broth
2 cups dried lentils
1/2 cup uncooked quinoa (can omit)
Pantry:
olive oil
salt
pepper
oregano
thyme
parsley
garlic powder
red wine vinegar
Freezer:
1 - 15 oz bag frozen mixed vegetables (carrots, corn, peas and green beans)
