Friday Night Bites--Light Jambalaya

Another great, light, oh-so-good slow cooker recipe. If your kids are hesitant, tell them the sausage is "hot dog" in spaghetti sauce. It's all in the marketing...sometimes.

Jambalaya
1 large onion, finely chopped
1 red pepper, finely chopped
2-3 stalks celery, finely chopped
4 cloves garlic, minced
1-28 oz can of diced tomatoes, undrained
1-16 oz (or similar size) package of smoked turkey sausage
1 T parsley flakes
1/2 t dried thyme
1/2 t salt
1/2 t pepper
1/2 - 1 t red pepper sauce (we use 1t, but use it to taste...you can always add more at the table)
1 pound frozen, cooked, peeled shrimp, thawed
3-4 cups of cooked brown rice

1. Mix all ingredients except shrimp and rice into the slow cooker, cooking on high for 3-4 hours or low for 7-8 hours.
2. Stir in shrimp and rice, and stir well. Turn slow cooker to high and cover for about 15 minutes to allow everything to be thoroughly warmed.
3. Enjoy!

Now I am off to whip this recipe together for our dinner tonight!

Sounds yummy. Funny thing is, the marketing that goes on in the Slacker household is to Slacker Daddy. He thinks turkey substitutes (ground turkey, sausage, etc) are gross and refuses to eat them.

Unless of course, I'm able to sneak them in without him looking...then he doesn't even notice.

Oh let me tell you, it wasn't easy with Sweet Pea Husband at first either. Even today, sometimes he sweetly asks, "can we use meat for ___fill in the blank___ instead?"

But I am with you...on many things, you can't even tell!
