Short and Sweet

I'll keep this's something sweet for the autumn! This is a sweet pea family favorite:

Awesome Pumpkin Muffins (Adapted from
2 ¼ c flour
1 ¾ c sugar
¾ t each of salt, baking soda, baking powder, nutmeg, cinnamon, ground cloves
3 eggs (or 6 egg whites to make them almost fat free)
1 – 15 oz can of pureed plain pumpkin
½ c unsweetened applesauce
½ c walnuts (optional)
¾ c raisins (optional)

Preheat oven to 350 degrees. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon, and ground cloves. In a separate bowl, mix the eggs, pumpkin, and applesauce, until smooth. Add this mixture to the dry ingredients and stir thoroughly to make a smooth batter. Stir the raisins and walnuts (if using) into the batter. Spoon batter into greased muffin cups. Bake for 30-35 minutes or until a toothpick comes out clean.

I love any and everything pumpkin. I have one from Parents Magazine from last year with no sugar I'll send you. Also finally made your crock-pot taco soup - yummy - and your pulled pork is in the crock pot now. I love using the crock pot in the fall.

Okay, a year after you posted this, I am trying the recipe. Can you come up with a pumpkin (with pumpkin in it, versus shaped like a pumpkin) cookie recipe? If so, please share!
