April Fools

So, have you pulled any good fooling in your home today?

Sadly, I have never been a good fooler. I cannot "act" to save my life. Seriously. I make Tori Spelling look like Oscar material.

I have been thinking about how a lot of cooking for sweet peas and pumpkins is a big fool. It might not be blatant, but let's face it, if I told my little ones, "tonight we are going to have some pasta I made. It is made up of onion, spinach, tomatoes and lots and lots of vegetables!" I probably wouldn't have a lot of takers.

Of course if you want to go all out and try a real fool, here is something I have often thought about trying: "Eggless Salad"

It is a recipe that uses tofu instead of eggs to make egg salad. I was skeptical at first, but read the reviews! I saw it made a long time ago and actually thought about making it this week but since we had our fair share of *real* egg salad last week, the thought doesn't appeal to me right now.

Anyone tried tofu in a recipe like this? I have been trying to get it into our diets a little bit more and tried a recipe I liked recently that I need to post.

  1. I *was* going to do an "I'm pregnant" post with April Fool's in the comments...but I'm pretty sure my MIL reads the blog but not the comments, so I decided against it.

    And reading your post made me remember that Family Fun has all sorts of fun food pranks (http://familyfun.go.com/recipes/family/specialfeature/aprilfools-food-pranks-ms/) but of course, I didn't think about it until now.

    A friend of mine told her older son that they had a "wind day" from school today. He bought it hook, line and sinker. It is windy here, but I think they call *real* wind days, "hurricane days."

  3. SM, those were great ideas. Maybe next year - if I remember.

    As for the tofu, I'd say mixing it into already creamy things (guac, smoothies) is the easiest way and then I think stirfry is probably the next best. I remember this great chocolate pudding recipe from Cooking Light that used tofu and got their highest rating.

  4. Again...girls probably wouldn't mind tofu, but John wouldn't touch it with a 10-foot pole.

    Of course, tofu falls into the "scares me" category in terms of cooking with it. That and ginger...and fish sauce. Perhaps I need a Thai cooking class to get over my phobia?
