First, I am so sorry the pavlova gave you ...Sarah,

First, I am so sorry the pavlova gave you trouble. I will say that there is an art to the meringue whipping, and I, too, have had similar experiences! When you take the mixer out of the whites, your egg whites should have stiff peaks, but they shouldn't look "dry" if that makes sense...still shiny. Also, my guess is that perhaps your oven may be warmer than average (almost every oven leans one way or the other) so if you need to, reduce the heat to 275 to see if that helps the issue of being brown on the outside and chewy inside.

The pavlova will, even when made perfectly, have a bit of a marshmellow-y inside. But I hope these tips help. Thanks for the feedback!!!Sweet Pea Chefhttps://www.blogger.com/profile/05201359992849023769noreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-75533846523599986782010-05-26T17:42:03.296-04:002010-05-26T17:42:03.296-04:00Oh, by the way, it was still delicious :)Oh, by the way, it was still delicious :)sarah22277https://www.blogger.com/profile/10165362914397739036noreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-66318526727505604242010-05-26T17:41:13.890-04:002010-05-26T17:41:13.890-04:00I made this yesterday, and I had a really hard tim...I made this yesterday, and I had a really hard time with the shell. The first batch I think I did not beat enough after each addition of sugar, which made it runny and flat, so I tried again and got a much firmer second go-round. It was a deep golden brown after cooking for an hour, but once I removed it from the oven, it fell and was still squishy inside. Any thoughts?sarah22277https://www.blogger.com/profile/10165362914397739036noreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-79770962003207828822010-05-12T15:52:18.829-04:002010-05-12T15:52:18.829-04:00You guys should definitely try this...it is a winn...You guys should definitely try this...it is a winner!Sweet Pea Chefhttps://www.blogger.com/profile/05201359992849023769noreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-46069308804640448622010-05-12T15:14:04.798-04:002010-05-12T15:14:04.798-04:00You're posting up a storm.
