I have one similar I will send to you tomorrow. It's great for entertaining as they're individual zucchini boats stuffed with feta and a few other yummy delights. Please come visit me at my fairly new log sometime.Live.Love.Eathttps://www.blogger.com/profile/10014244331752838359noreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-10187866942926179932008-04-22T14:22:00.000-04:002008-04-22T14:22:00.000-04:00I made the roasted zucchini last night for my fami...I made the roasted zucchini last night for my family. Well really just for me since my 2 year old refused to try and zucchini is one of the vegetables my husband doesn't care for, even though he claims to love vegetables. :) My husband did try the zucchini and said they were kind of soggy. I agreed but I still thought they were very tasty. Any thoughts on why my zucchini turned out soggy? Too much oil? Cooked too long?

Thanks for the recipe.

-- PAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-59711014792735829392008-04-19T07:46:00.000-04:002008-04-19T07:46:00.000-04:00Sound great by I'm the only one in my house who do...Sound great by I'm the only one in my house who doesn't think feta takes "like feet." I've got to work harder on getting some feta-fans in my house!JerseyBabyhttps://www.blogger.com/profile/02644591854881376153noreply@blogger.comtag:blogger.com,1999:blog-6496583714739399997.post-86994411538131602752008-04-18T12:47:00.000-04:002008-04-18T12:47:00.000-04:00Mmmm...sounds good, except I'll omit the mint.
