Barbecue Chicken Meatloaf

I am over at FamilyEducation.com today sharing a new family favorite recipe for Barbecue Chicken Meatloaf. I worked on this recipe over the holiday break and oh-my-goodness, we are hooked.

You know how some meatloaf recipes are a bit, hmmm, bland? This is not.

You know how sometimes things with the word "barbecue" in it are too spicy for kids? This is not.

You know how meatloaf can sometimes be a bit greasy and diner-ish? This is not.

For all these reasons and more this recipe was a hit! Click here for the recipe link.

Have a sweet afternoon,
SPC

I tried this and it was pretty good. I had to use ground turkey b/c TJ's didn't have any ground chicken. I think it made it a little dry but I liked the flavors. I'm enjoying the leftover meatloaf sandwiches!!

Enjoyed it. So did my husband, and the kids, ages 17 months and 3. I thought it held well for leftovers. Trying the crock pot lasangna today. Thanks for the great recipes!

The linked recipe doesn't indicate what to do with the onion mix once it is sauteed. I added it along with the oatmeal and grits. Looking forward to 45 minutes from now!
